This simple yet flavorful dish turns humble cabbage into a smoky, caramelized delight with a rich garlic butter sauce. It is perfect as a side dish or a light main course.
In our guide to budget superfoods, we mentioned that grilling cabbage can completely change the way it tastes—but how do you do it?
This simple recipe adds a dash of garlic butter, lemon and parmesan to shake things up.
Serve warm as a side dish with grilled meats or as a vegetarian main with a side of quinoa or hummus.

Ingredients
Serves four as a side dish. Two as a main.
- 1 medium green – or red – cabbage
- 3 tbsp olive oil
- 3 tbsp unsalted butter, melted
- 3 cloves garlic, minced or 1 tablespoon ready-made minced garlic
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp red pepper flakes (optional, for heat)
- 1 heaped tbsp Grated Parmesan
- 1 tbsp lemon juice
Method
Preheat the Grill
Heat your grill to medium-high (about 400°F/200°C). You can also cook this in the oven- see note below.
Cut Cabbage
Remove any loose outer leaves. Slice the cabbage from the top to the base creating five or six 1-inch thick rounds (steaks). Keep the core intact in as many as possible to hold them together but, if you do end up with some loose cupped leaves, don’t worry about it. They cook just as well.
Melt The Butter
Add the butter to a small bowl and warm in the microwave for 10 seconds. Stir and repeat until melted. Do not over cook it, it will burn. You can also do this in a small saucepan but stir well to make sure you don’t burn it.
Make the Garlic Butter
In a small bowl, mix the melted butter, olive oil, minced garlic, smoked paprika, salt, black pepper, and red pepper flakes.
Brush & Season
Brush both sides of each cabbage steak generously with the butter mixture. Sprinkle on the parmesan cheese.
Start Grilling
Place the cabbage steaks on the grill. Cook for 5–7 minutes per side until charred and tender but not mushy. Use tongs to carefully flip them.
Finish & Add Extras
Remove from the grill and drizzle with lemon juice. For extra flavor, add more parmesan, crumbled feta, sprinkled bacon bits or nutritional yeast. Or, drizzle ranch dressing, siracha, or a little hummus over each steak.
Prefer to Oven-Cook?
Just like Brussels Sprouts, Cabbage roasts well, so you can also make this dish in the oven. Heat the oven to 400F (200C), place the steaks on a non-stick tray and roast for 25-30 minutes, turning halfway through the cooking time.
